1. Preheat the oven to 425°F (220°C).
2. Peel, core, and slice 6 medium fresh apples into thin wedges.
3. In a large bowl, combine the sliced apples with 1 cup granulated sugar, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, 1 tsp salt, 2 tbsp bottled lemon juice, and 1 tbsp cornstarch or tapioca starch. Mix well and set aside.
4. Roll out one pie crust and fit it into a 9-inch pie pan, pressing it gently against the sides.
5. Pour the apple mixture into the pie crust, spreading it evenly.
6. Roll out the second pie crust and place it over the apple filling. Trim any excess crust and crimp the edges to seal.
7. Cut slits in the top crust to allow steam to escape.
8. In a small bowl, whisk together 1 large egg and 1 cup whole milk for the egg wash.
9. Brush the egg wash over the top crust and sprinkle with coarse sugar if using.
10. Bake the pie in the preheated oven for 15 minutes.
11. Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the apples are tender and the crust is golden brown.
12. Remove the pie from the oven and let it cool on a wire rack before serving.
