Turn a grill into a pizza oven with a steel, peel, and infrared thermometer. Dough schedule and launch technique included.
1. Purchase a pizza steel measuring 16x16 inches and a pizza peel with a wooden handle.
2. Preheat your grill to high heat (around 500°F) for at least 30 minutes.
3. Use an infrared thermometer to check the temperature of the grill grates and ensure they reach 500°F.
4. Prepare your pizza dough: combine 2 cups of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of sugar, and 1 teaspoon of instant yeast in a bowl.
5. Add 3/4 cup of warm water (about 110°F) to the dry ingredients and mix until a dough forms.
6. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic, then let it rise in a covered bowl for 1 hour.
7. Roll out the dough to a 12-inch circle on a floured surface, then transfer it to the pizza peel.
8. Add your desired toppings to the dough, leaving a small border around the edges.
9. Carefully slide the pizza from the peel onto the preheated pizza steel in the grill.
10. Close the grill lid and cook for 8-10 minutes, checking for doneness and a crispy crust.
11. Use the pizza peel to remove the pizza from the grill and let it cool for a few minutes before slicing.
