Grill salmon and vegetables on soaked cedar planks. Includes plank prep, soak times, and three rubs.
1. Soak two 12x6 inch cedar planks in water for at least 1 hour.
2. Preheat the grill to medium heat (about 350°F).
3. For the first rub, mix 2 tablespoons brown sugar, 1 tablespoon paprika, 1 teaspoon garlic powder, and 1 teaspoon salt in a bowl.
4. For the second rub, combine 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 teaspoon dill, and 1 teaspoon black pepper in a separate bowl.
5. For the third rub, blend 1 tablespoon soy sauce, 1 tablespoon honey, 1 teaspoon ginger, and 1 teaspoon sesame oil in another bowl.
6. Pat 1 pound of salmon fillets dry with paper towels and season each with your choice of rub.
7. Place the soaked cedar planks on the grill and close the lid for 5 minutes until they start to smoke.
8. Lay the seasoned salmon fillets and 2 cups of assorted vegetables (like bell peppers and zucchini) on the planks and grill for 15-20 minutes, or until the salmon is cooked through and vegetables are tender.
