Infuse three house bitters — aromatic, orange, and a wildcard. Botanicals, high-proof base, and dasher bottles.
1. Measure 2 cups of high-proof alcohol (such as Everclear) into a large glass jar.
2. For aromatic bitters, add 1 tablespoon of gentian root, 1 tablespoon of dried orange peel, 1 tablespoon of cardamom pods, and 1 tablespoon of cinnamon sticks to the jar.
3. For orange bitters, add 1 tablespoon of dried orange peel, 1 tablespoon of coriander seeds, and 1 tablespoon of dried lemon peel to the jar.
4. For the wildcard bitters, choose your flavor (e.g., 1 tablespoon of lavender flowers or 1 tablespoon of chocolate nibs) and add it to the jar.
5. Seal the jar tightly and shake vigorously for 30 seconds to combine the ingredients.
6. Store the jar in a cool, dark place for 2 weeks, shaking it gently every few days to mix the botanicals.
7. After 2 weeks, strain the mixture through a fine mesh strainer or cheesecloth into a clean bowl to separate the solids from the liquid.
8. Using a funnel, pour the strained bitters into three dasher bottles, labeling each bottle accordingly.
