Bottle a set of four infusions for cooking or gifting. Covers safe herb prep, heat method, and shelf life.
1. Prepare 1 cup of fresh basil leaves by rinsing and patting dry.
2. In a saucepan, combine 1 cup of olive oil and 1 cup of white wine vinegar.
3. Add the prepared basil leaves to the saucepan.
4. Heat the mixture over low heat for 30 minutes, stirring occasionally, ensuring it does not boil.
5. Remove the saucepan from heat and let it cool for 15 minutes.
6. Strain the mixture through a fine mesh sieve into a clean glass bottle, discarding the solids.
7. Repeat steps 1-6 for 1 cup of fresh rosemary, 1 cup of garlic cloves (peeled), and 1 cup of chili flakes, using the same olive oil and vinegar base for each infusion.
8. Label each bottle with the infusion type and date, and store in a cool, dark place.
