Quick chicken congee

Instructions

1. Rinse 1 cup of jasmine rice under cold water until the water runs clear.

2. Peel and chop the whole carrots into 1/4-inch pieces.

3. In a large pot, combine the rinsed rice, 2 cups of chicken broth, and 2 cups of water.

4. Bring the mixture to a boil over medium-high heat.

5. Once boiling, reduce the heat to low and cover the pot.

6. Simmer for 30 minutes, stirring occasionally to prevent sticking.

7. Add 1 cup of cooked chicken, 1/2 cup of diced carrots, 1/2 cup of fresh peas, and 1 tablespoon of grated fresh ginger.

8. Stir in 1 tablespoon of soy sauce, and season with 1 tsp of salt and 1 tsp of fresh pepper to taste.

9. Continue to simmer for an additional 10-15 minutes, or until the congee reaches your desired consistency.

10. Remove from heat and stir in 1 tablespoon of sesame oil.

11. Chop the fresh green onions.

12. Serve hot, garnished with 1/4 cup of chopped green onions.
