Build a starter from flour and water, then bake your first real boule. Banneton, lame, scraper, and flour included.
1. Combine 100g all-purpose flour and 100g water in a glass jar. Stir until smooth.
2. Cover the jar loosely with a cloth and let it sit at room temperature (around 70°F) for 24 hours.
3. After 24 hours, discard half of the starter (about 100g) and add 100g all-purpose flour and 100g water. Stir until smooth.
4. Repeat the feeding process every 24 hours for 5-7 days until the starter is bubbly and has doubled in size.
5. Once the starter is ready, mix 500g bread flour, 350g water, and 100g active sourdough starter in a large bowl. Stir until no dry flour remains.
6. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
7. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise for 4-6 hours at room temperature until doubled in size.
8. Shape the dough into a round loaf and place it in a floured banneton. Cover and let it proof for 1-2 hours.
9. Preheat your oven to 450°F with a Dutch oven inside for 30 minutes.
10. Carefully transfer the dough from the banneton to a piece of parchment paper. Score the top with a lame.
11. Remove the Dutch oven from the oven, place the dough inside, cover, and bake for 30 minutes. Then uncover and bake for an additional 15-20 minutes until golden brown.
